As soon as shellfish is harvested off the sandy tidal flats of Wellfleet, it is brought to the company facility and placed into large custom-built water tanks. The tanks are filled with constantly circulating, aerated water that is kept at optimum temperature for the clams' metabolism. This operation serves two purposes; first, it allows the clams to purge any sand from inside their shells so the grit does not reach your dinner plate; secondly, because all shipments are custom packed to order right out of the water, freshness is unsurpassed. The source of water in the wet storage tanks is Wellfleet Harbor so the world famous taste remains undiluted. The process involves significant effort and expense, but the result is a superior clam or oyster with an extended shelf life.
